I'm just getting started with BBB, and wondering how I connect to my laptop over Ethernet (planning on using IIoT for UI) and EtherCAT, when the BBB only has one NIC?

You need an EthernetToUSB or wifi dongle in order to do this. EtherCAT needs EXCLUSIVE acccess to the Ethernet Port.
